The Plaza Hotel and Eloise






Does everyone know the story of Eloise? #Eloise was a girl who lived in the #PlazaHotel in NYC created by author Kay Thomas and depicts the antics of a precocious child at the age of six. Eloise has been a long standing tradition at the Plaza Hotel and to this day there is an Eloise suite in the hotel that can be rented out as well an Eloise shop that host tea parties for girl of which this cake was made for. The picture of Eloise is to the right of the cake above and  as seen she wears a white shirt with ruffles down the middle, a black pleated shirt with suspenders and a pink bow on top of here head, the pictured illustration shows it in black but it's always pink so, we took all of the elements just described and made it into the cake as shown above.

Honoring a Good Thing that Will be Lost to Yesteryear.




My client wanted a cake for a #party she was having in #MontaukNY. The cake was to be a replica of the landmark #EastDeckMotel a surfer's haven which had just been acquired by a group of investors who are secretly going to most probably make it into a members only property with high end amenities. My client as many of the locals and various Montauk home owners from the City were against the project and the cake was an homage to the motel, Edie 40 replaced the sign East Deck Motel that sits atop of the real structure, and the scale was smaller to accommodate the party goers for the evening. Covered in fondant we texturized the sides of the building with an impression mat and layered it to make it look like real wooden shingles. Then we marbelized brown fondant and divided it into equal long slabs to replicate wooden planks. My client loved it! It really did look like the East Deck Motel.

Making it Stick!





This cake was fun to make but made me feel sick to my stomach because both the bottle of Perrier and espresso martini had to be balanced and that was a difficult feat. Both were made out of cake and both had to stand up on cake, ok we've done that before nothing too difficult, but this cake or rather the tray which was made of cake was shallow so the dowels really had nothing to dig into. Now here's the best part, when the cake was delivered to the venue and assembled it looked great as seen in the picture but the venue had no a/c and it was raining and humid a nightmare for fondant creations. The bottle keep leaning and then so did the the martini glass, party revelers stood besides me and looked and admired the cake when all off a sudden the martini glass just jumped right off the cake! Everyone looked confused and one party guest remarked "It's a good think it happened now before the party really started." I smiled begrudgingly, I was nervous (sick to my stomach), but I knew what I had to do. I reached into my tool bag and pulled out a brush and put edible glue on the base of the glass and on the cake and adhered them together and prayed. I waited around for 10 minutes spoke with the host and hostess of the party who loved the cake, and then checked the glass to make sure that it was secure, it was, and I left but prayed again it was safe and would be for the rest of the night. A week later I got a call from the hostess' concierge company and was asked to price out a 3D cute white dog cake. Hooray!!! I knew not only the cake was liked when I presented it to the host and hostess but it stayed in place! Thank God!

Sometimes We Make Cakes that Look Like Food. Really!







We've made a pizza cake, a basket of blueberries and even a turkey shaped cake for Thanksgiving. I'll never really understand why people like cakes that are shaped into food but this week we had the challenge of making a #sushicake. Yes a cake that had sushi piece as seen above. Not bad I'm thinking in comparison to the other food cakes not because the other cakes didn't turn out well, it's just that sushi is pretty to look as a matter of fact it's beautiful! Made with a yellow cake and frosted with chocolate buttercream and then covered with #fondant and hand sculpted sushi pieces.

It's All in the Details!





The customer who ordered this #fallthemedcake sent six different photos of cakes and a long list of things she wanted on the #cake we were creating for her. It's not that she wanted us to reproduce anyone else's cake but she want us to use different elements from each. The phone call were maddening and the emails got very confusing after a while (see initial email below (English is not her first language)), BUT... we somehow pulled it off and the customer commented that it was beautiful! Thank God!

I would like to give you an idea for how I would like the cake to be for the 27th September 2014.

It can be two tier 6” first tier and the second tier 4”. We would like it to be for 20 - 25 people.

I like the fence in the fence cake and everything else from the second fall-cakes. 

Just to give you an idea of what I think will look nice and i would prefer to have for the cake is the little fence around the first tier instead of those white pearl look. You could consider one inch of wafer cookies too. 

Then inside the fence it would be the same almost as the fall cake photo with the green stripes and off white background and dried leaves, pumpkins, sunflower, creepers all like it is in the fall cake snap. 

Second tier creepers going up on the second tier with the dried leaves, pumpkins, sunflowers and the wooden banner kind of look saying EVA AND ARYA. Just add owls too sitting on any tier sitting on the creeper or fence. 

On top of the second tier make a small barren tree on the top with an owl sitting on it and two pumpkins under it, next to that pumpkins in a cart overflowing and everywhere around. Or just make two pumpkins under the tree if that takes all the space. You can also have the wooden banner on the top instead of on the second tier just a thought. I would like the tree to be like the tree in the tree photo attached.

Luigi of #MarioBros sits on top of a two tiered fondant cake made of a #funfetticake. We added clouds around the tiers and wrote the inscription in script and as well as a cutout for the name keeping the design simple and in budget.

Wow, talk about a lot of detailed work those transformers are a humongous under taking thank God they wanted #OptimusPrime closed and not having his guns, tanks, cars, canons, boats, racket ships and all the other stuff he has inside or underneath him. The cake was yellow with vanilla buttercream under the fondant.

This week brings some challenging cakes into Snooky's. One's a unicorn cake (anatomy is always the hardest thing to create in cake.) And the other is a racing car cake that is to be made entirely fondant and last but not least a 3D Optimus Prime cake that will have both Ophelia (my assistant) and myself bald from pulling our hairs out by the end of the week. But we have perfect weather for this week so that counts big in my book. Also I relish the challenge of this weeks cakes. Stay tuned for photos.

Taking an Idea and Tweaking It!






When the client requested we make the cake that is below for a fortieth anniversary party we cringed, however they did request that the colors of the flowers be lavender and purple and that they did not have to graduate in color and that the flower could be different, we ran with it. The top cake pictured was made for the client sans bow, actually we did include a bow that's where she stopped our creative license but we snapped a picture before placing the bow on top, we just thought it was over worked with it because it was simply beautiful without it.

A Cake Fit for a Princess!




The princess cake, adorned with edible jewels in the crown and topped with the princess' age (she turned five). We added a draping piece of fondant on the bottom tier and then affixed bows on the draped gatherings. This cake turned out to be three tiers of fanciful delight and little Adriana screamed with laughter  when it was presented to her.

Get in Shape for Summer.






It's that time of year again, time to get into shape if you haven't maintained it. All spring and summer long I see #Soulcycle tee shirts, hoodies, and locations around the city it must be the IT place for spin classes. Anyway, this cake was made for a SoulCycle enthusiast and we thought it was perfect for this time of the year when we are trying to get in shape or take our workout routine to the next level. Made out of fondant and gumpaste which is covering a lemon cake with passion fruit buttercream.

In Honor of Peter Cotton Tail and the Easter Bunny.




Ok, so he's not bright and colorful like Peter Cotton Tail or the Easter Bunny but that's because we made this cake replicate the logo of a comedy group in NYC called #KillerBunny, but we at Snooky's think he still turned out cute! Made out of chocolate cake and buttercream and covered in fondant we were told that our bunny was the highlight after a comedy show so we are claiming him as our Easter Bunny cake however if it's for the actual holiday he will have to make him more colorful sitting on grass, but for the minimalist I suppose he perfect just the way he is.

This Little Piggy





This little piggy was created for a little girl who loves piglets. I being a pig lover myself and let me just say I am all things pigs for example I have a crystal pig that sits on my self, napkin rings made out of pewter that I had to have and bought directly from a restaurant I was dining at in Virginia, a stuffed piggy which I have had since my college years and refuse to throw away, and the list goes on. Needless to say I had a lot of fun making it this cake, it's simple in design but depicts the animal nicely and in a cute way and was a nice break from some other the other cakes that had crazy over the top details.

Ushering in Warm Weather (Because we really really need it!)



Sprinkles always remind me of warm weather, Mr. Softee ice cream trucks with their familiar music that has lasted for decades having patrons lined up in front the ordering window and others walking away with their sweet twisted custard cone with multi-colored sprinkles. The memory conjures summer and Americana or at least warm weather I'm not really sure if Mr. Softee was around during the Americana period. Anyway, this cake was ordered for a wedding ceremony for a couple who loved sprinkles and who was to have a wedding to follow in the near future in Israel. We added a soft shimmering ribbon and ties a bow on each tier making it a beautiful simple cake that brought smiles to everyone. Summer we're waiting for you here in New York City we need you badly to erase all the snow storms of the season.

A Rescued Valentine's Day



She arrived with roses in her arms when she came to pick up her kitty cake that we made for her that evening. Alison Valentine was a singer who ordered a cake to be make in a 2D shape of her logo, a white kitten. "Are those flowers for me?" I asked, she replied "Yes, do you want some?" I smiled and presented her cake to her. "I love it!" She said while blushing and then proceeded to pick through the large bundle of roses. "This is for you." Thank you!" I said excitedly as I extended my hand to accept the rose. "My boyfriend and I just broke up, this is perfect, you made my night" "OMG" She exclaimed. "You have to come to my performance tonight you might meet your Valentine there, please come." I smiled and thanked her for the invitation but declined, it was a cold snowy day and I didn't feel like coming out. "You really should, I'd love to see you there. Anyway, I'll put your name on the list to get in in case you change your mind." And with a few key strokes on her iphone I was confirmed and she left. Thirty minutes later I had changed my mind, and I accompanied with my brother and his girlfriend later that evening headed for Soho to the Maison O where Alison was performing. 

I am so glad I did go out because I had a blast and danced all night long. I took this picture with Alison in her red dress just before her performance.

It's All About Timing.



We were asked to make a clock cake for one of the people who was instrumental in installing "The Clock" exhibit at Lincoln Center an art instillation by video artist Christain Marclay I must say truly a masterpiece and a must see if your ever in a city that has it (it travels around the world). So, we made an old fashioned clock, you know like the one we all saw in school in the past. It had a first, second, and third hand and was very visible to all especially if you were running late (I remember those days). Anyway, decorated all  in buttercream and done in the colors black, white and red for the third hand. Truly a classic!

Guess this celebrity.


WHO IS THE CELEBRITY?????




This has frustrated me for a couple of days now. We made this cake on the fly for a celebrity of which we the managing company would not reveal their client's identity. The instructions were (from actual email):

Hey,

I just wanted to send you the cake instruction we discussed.

> Cake instructions:
> Chocolate cake
> 3 tiers
> small cake
> Bottom Layer: Girls skirt
> Middle Layer:  Buttons and Lapels for a tuxedo
> Top Layer: bowtie on one side/pearls on the other
> Full cake: pearls hanging down

Sculpting a bulldog for a cake



We were asked to make a bulldog out of cake for a small party. As pictured above we made the dog which was sculpted out of cake seated on top of a small cake, it was easier to stabilize him that way, had it been a larger cake we could have put him on all fours, so we seated in him in grass and put a bandanna around his neck which was cute and added a pop of color.


As shown above we started with the head, not seen but used was a piece of styrofoam which was carved and then covered in fondant, making the head out of cake or even just fondant would have been too heavy and would have pulled the head off of the body.


Here we are adding more detail by adding more folds to the skin of the dog's face and by painting the face around the eyes, the bridge of the nose and underneath the mouth to give definition.


So I went a few steps a head, sorry I'm new to showing the process of the making of my cakes and got a head of myself by finishing the cake, but I cropped out the body so you can see the dog's added features. The eyes were painted with a brush in brown and then a thin dark brown line under the eye (like eyeliner) was applied to the lower lid. A pink piece of fondant was added for a tongue and and then a brown piece fondant was attached to the head to represent the color variations of the dog's coat. And lastly ears were placed on either side of the head.

The body was carved out of cake and the color of the top of the head was repeated on the back part of the dog's body and a red bandanna was put around the neck of dog. This was a fun cake to make and took me back to an art sculpture class I took many years ago.
